Shams Marinated Butter Beans
It’s surprising how relatively underutilised butter beans are compared to other white beans even though they are creamier and absorb flavours better.
We marinate our beans in red pepper molasses, garlic and local olive oil for a burst of flavour that made our butterbean and pomelo salad a huge success. You can eat it alone as a side dish, throw it into a salad or blend it into a dip - the possibilities are endless.
