Whole Wheat Flour
Unsifted, locally grown, whole wheat flour. Local wheat is freshly milled by the women of Ibda'a Al Balqaa in Bayouda every friday. The freshness of milling has a very significant impact on the taste itself as well as the nutritional value of the flour. If leavening your dough using the sourdough method (like we do), freshly milled flour is an absolute must.
